Carrots

High in beta-carotene, which the human body converts to vitamin A, carrots are great for your eyesight and skin and are one of those vegetables which are noticeably tastier when organic and local. The stored ones you receive in the winter might need a peel but in general we advise a quick scrub instead, as just under the skin is where those nutrients lie! 


Beyond batons a.k.a handy vehicles for delicious dips, carrots bring sweetness to any dish and work well with citrus and spices, whether glazed and roasted or raw in a gingery slaw.
