Aubergines are a great vehicle for strong flavours! This is our take on a classic recipe with Miso and Honey hitting those sweet and salty taste buds. This is great as a side dish or as a main in it’s own right with some steamed rice and salad from your veg boxes.

Ingredients: 

 

2 Medium Aubergines (4-500g) or 3-4 Small Aubergines

1 tbsp Organic White Miso

2 tbsp Honey

1 tsp Sesame Oil

1 tbsp Water

Method: 

Step 1.

Pre heat your oven to around 220c. Cut your aubergines in half lengthways, then score the inside with a knife in a criss-cross pattern (this helps the aubergines cook quicker and lets the marinade spread better).

Step 2.

In a small bowl add the Miso, Honey, Sesame oil and a little water to slacken the mixture and mix until smooth. It should be fairly thick in consistency.

Step 3.

Place your Aubergines on a baking tray flesh side up and then spoon the mixture evenly over the Aubergines. Make sure the marinade gets into all the flesh!

Step 4.

Place in the oven and bake for around 30 mins until the glaze is a deep golden colour and the aubergine flesh is nice and soft. Enjoy!
