Courgettes fritters are a classic summertime recipe and these soft and light fritters with the cool flavour of courgettes with a contrasting spicy dip will go down a treat at home. They are gluten free too. If you don’t have gluten free flour, normal self-raising flour will work too. Give them a try! This recipe makes around 12-14 fritters.
For the fritters:
2 Courgettes (around 400-500g)
250g Ricotta
Zest of a Lemon
1 Egg
2 sprigs of Mint or Oregano (Finely chopped)
100g Gluten Free Self Raising Flour
Salt and Pepper
Oil for frying
For the dip:
2 tbsp Harissa Paste
3 tbsp Honey
2 tbsp Olive oil
Juice of 1 Lemon
Step 1.
Get yourself an old tea towel, then using a course grater, grate the courgettes into the tea towel. Gather the edges of the cloth up then twist and squeeze the moisture out of the courgettes. Once done place in a large mixing bowl.
Step 2.
Add the rest of the ingredients to the bowl and mix with a spatula until well combined. Season with a good pinch of salt and pepper.
Step 3.
Make your dip. Add the Harissa paste, Honey, oil and lemon juice to a small bowl and mix well then set aside.
Step 4.
Heat your frying pan up on the stove over a medium heat, add enough oil to shallow fry. Once the oil is hot add heaped tablespoons of the mixture to the hot oil.
Step 5.
Once brown on one side flip the fritters over. Fry on the other side until golden brown and place on a plate with kitchen roll. Keep frying in batches until the mixture is used.
Step 6.
Assemble on a plate and dip away into the sauce!
