Kale Salads: Remove kale leaves from the stalks, rip or roughly chop and place them in a bowl. Pour over a generous amount of olive oil and some sort of vinegar. Then massage everything into the leaves for a minute or so until the leaves soften. You could also add some lemon or lime juice or for something more pungent, a grated clove of garlic. At this stage you can either serve as it is or mix in seeds such as sesame, sunflower and chunks of avocado. Its great served alongside roasted vegetables or why not try it in a wrap with hummus and again roasted vegetables or falafels. These are just some suggestions but it can work alongside many dishes.
